I visited a lot of Asian countries and I always observe how the locals hold their chopsticks. The version you showed in the video is ONE of the methods I saw. Another very common one is to control the upper chopstick with both your index finger and your middle finger and let the bottom chopstick just lay on your ring finger. And honestly that’s the version I use because you have so much more control and a much tighter grip to grab the food.
